Ingredients

- 2 tbsp melted butter (plus more for the pan)
- 1 tsp vanilla extract (optional)
Directions
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the milk, egg, melted butter, and vanilla.
- Pour wet ingredients into dry ingredients and mix gently until just combined.
- Heat a non-stick skillet over medium heat and grease lightly with butter.
- Pour 1/4 cup of batter per pancake; cook until bubbles form and edges set, then flip.
- Cook the other side until golden brown. Serve warm.
